Cinnamon Muffins

INGREDIENTS:

2 cups flour
1 ½ T. cinnamon
1 t. vanilla
2 t. baking powder
1 cup salted butter softened
1 cup sugar
2 eggs, room temperature
1 cup milk, room temperature

 

Topping:

1 T. sugar
1 t. ground cinnamon

 

Directions:

Preheat oven to 400 degrees and place liners in muffin tin.
Mix together flour, baking powder, and cinnamon.
In another bowl, mix sugar and butter and mix until fluffy.
Add eggs and mix well and blend in vanilla.
Add the dry ingredients and combine.
Add in the milk and mix until smooth.
Fill muffin tins 2/3 full.
Mix together the topping mix and spread on top of muffins.

Bake for 16-18 minutes.
